What’s for Dinner

This week’s box: chard, kale, bok choy, three leeks, three beets, a head of cabbage, a bag of potatoes, oranges and lemons.  You can see how things start to get repetitive…

Tonight: pasta with easy tomato sauce
Thursday: borsch
Friday: spinach, leek, and mushroom lasagna
Saturday: I’m out with friends all day, so dinner will be leftovers/delivery
Sunday: chicken roasted with the remaining potatoes
Monday: chicken soup (using carcass of Sunday’s bird)
Tuesday: orange pork stir-fry with brown rice and steamed bok choy

    That stir-fry sounds fantastico! Maybe I want that instead of the pork with salsa verde that I had planned.

    personally i’m onboard with the spinach, leek and mushroom lasagna. yum!

    i floated your leek theory past Bizzy and she’s intrigued.

    Wendy — I haven’t made that recipe yet but it was recommended on Urban Homestead (http://urban-homestead.livejournal.com/) and the woman who writes that blog used to be a professional chef in France…

    Nina — I used leeks in the borsch last night and it was tasty, but I’ve made it with onions too and to be honest it’s just as tasty that way as well. But the lasagna recipe originally called for onions and I *do* think it’s better with leeks.
