{"id":1148,"date":"2010-07-24T17:58:46","date_gmt":"2010-07-25T00:58:46","guid":{"rendered":"http:\/\/shannon.users.sonic.net\/blog\/?p=1148"},"modified":"2010-07-24T18:01:21","modified_gmt":"2010-07-25T01:01:21","slug":"a-picture-and-a-recipe","status":"publish","type":"post","link":"http:\/\/shannon.users.sonic.net\/blog\/?p=1148","title":{"rendered":"A Picture and a Recipe"},"content":{"rendered":"<p>Here&#8217;s your daily baby:<\/p>\n<p><span class=\"frame-outer  \"><span><span><span><span><img decoding=\"async\" src=\"http:\/\/farm5.static.flickr.com\/4075\/4824728749_cbe81b548b.jpg\" alt=\"\" \/><\/span><\/span><\/span><\/span><\/span><\/p>\n<p>He&#8217;s got quite some nose on him, hasn&#8217;t he?<\/p>\n<p>And here&#8217;s the recipe for zucchini fritters, adapted from <a href=\"http:\/\/www.cooksillustrated.com\/\">Cook&#8217;s Illustrated<\/a>:<\/p>\n<p>First you need to shred <strong>a pound of zucchini<\/strong>. You can do this with a box grater, but it&#8217;s a lot easier if you have a food processor with a shredder attachment. Toss the shredded zucchini with <strong>a teaspoon of salt<\/strong> and let it drain in a colander for ten minutes. Then wrap it in a kitchen towel and press out as much liquid as you can.<\/p>\n<p>Put the dried zucchini in a large bowl with <strong>half a pound of feta cheese<\/strong> and <strong>two eggs, lightly beaten<\/strong> (or you can do what I do, which is crack the eggs to the side of the bowl and just stir them up a bit right there). Mince up <strong>a couple of scallions<\/strong>, <strong>two tablespoons of dill<\/strong>, and <strong>a clove of garlic<\/strong>, and add it to the other ingredients in the bowl. Grind some <strong>black pepper<\/strong> on top (about 1\/4 teaspoon). Mix up everything in the bowl: it&#8217;s easiest to use your hands, to be honest, but you could use a spatula if you don&#8217;t want to get messy.<\/p>\n<p>When everything is reasonably well combined, sprinkle <strong>1\/4 cup flour<\/strong> on top and stir that in too.<\/p>\n<p>Put <strong>three tablespoons of olive oil<\/strong> in a skillet and heat it (over medium flame) until shimmering. Drop your zucchini mixture in by two-tablespoon spoonfuls: you should get six fritters in the pan at a time. Use a spatula to press the fritters down into the shape of small, fat pancakes. Fry &#8217;em until they&#8217;re golden brown, about five minutes per side.
